Peppermint Patties

7 oz Sweetened Condensed Milk
1/4 teaspoon peppermint oil plus three or four drops
2 1/2 cups powdered sugar (plus more for kneading)
12 oz dark chocolate chip
2 tablespoons shortening
In large bowl, combine sweetened condensed milk, peppermint. Add sugar; mix with fork. Turn mixture onto surface sprinkled with powdered sugar. Knead lightly to form smooth ball. Shape into 1-inch balls. Place 2 inches apart on wax paper-lined baking sheets. Flatten each ball into a 1 1/2-inch patty. Chill.

Melt chocolate and shortening in a double boiler on medium low heat. Let chocolate sit for a few minutes so patties will not melt when dipped in chocolate. Dip patties in melted chocolate with fork. Place on wax paper (draw fork lightly across rim of pan to remove excess coating).  Use the back of a metal serving spoon to smooth out the top of the patty. Let stand until firm. Store covered at room temperature or in refrigerator.
