To Brine Cabbage
1 Napa Cabbage
1/2 cup sea salt
Cut cabbage into fourths. Rinse. Spread salt over each cabbage leaf. Place in cabbage in five cups water. Add left over salt to water and cabbage. Let cabbage sat for three hours. After three hours rinse cabbage and drain water.
One half fuji apple
One half anjou pear
1/3 cup chili powder
Soy sauce and water as needed to make paste
Blended above ingredients to make a paste. Rub paste on each cabbage leaf. Place in bowl.
1 bushel chopped radishes
1/2 bushel of chopped mustard greens
1 bushel chopped green onions
Added 1 bushel chopped radishes, 1/2 bushel of chopped mustard greens, 1 bushel chopped green onions to the bowl with the cabbage. Add the rest of the paste to bowl. Mix. Ferment over night
