So I am going to give you the recipe of the base and then you can add spices. I did put in 1 teaspoon and cumin and garlic powder and some salt and pepper. Other people add soy sauce to their mix.
1/2 cup butternut squash 1/2 in cubes
1/2 Matchstick carrots
1/4 bell pepper diced
1/4 yellow onion diced
2 cloves of garlic chopped
Fresh shaved ginger
7 oz tofu (I used multi use tofu but I think firm would work better)
1 can black beans drained and rinsed
2/3 cup panko bread crumbs
Saute butternut squash in skillet on med heat. Cook about 5-10 mins. Add carrots cook 3 more mins. Add garlic, ginger, onion and pepper. Saute until onion are translucent. When veggies are sauted, chop the veggies up very fine.
Set out tofu on plate with paper towels. Set another paper towel on top of tofu. Soak up as much water from tofu as possible (you can also cook the tofu in a skillet or grilled to cook out more water).
While tofu setting, drain and rinse beans and place in a medium size bowl. Squish beans with hands till it is a paste. Crumble tofu and add to beans. Mix. Add veggies, panko and egg. Add your choice of spices. Mix. Shape into patties. Cook in a lightly greased skillet on medium heat. Add a little bit of water to the pan after 5 mins of cooking (this helps keep the burger moist). Repeat is necessary. Burgers will be done after about 10 mins.
